A traditional dish served at Swedish Christmas parties and New Year buffets

Ingredients
- 1.5kg King Edward or Maris Piper potatoes
- 250g onions
- 2 x 50g tins anchovy fillets, drained and finely chopped
- 350ml single cream
- 150ml milk
- 50g butter
Method
1 Coarsely grate the potatoes. Slice the onions into thin rings.
2 Preheat the oven to 200C/Gas 6. Grease a large, shallow ovenproof dish and cover the base with a layer of potato. Add a layer of onions and anchovies, and another potato layer. Continue until the dish is full.
3 Pour over the milk and half the cream, and dot with the butter. Bake for 20 minutes, then pour over the rest of the cream and cook for 30 to 40 minutes until tender. Loosely cover with foil if the top starts to turn too brown.
