Aubergines with pesto
Serves 4
Ready in 50 minutes
Ingredients
  • 2 large aubergines, cut in half
  • 4tbsp Asda virgin olive oil
  • 20g pack Asda fresh basil
  • 2 cloves garlic
  • 75g Parmesan, grated
  • 50g Asda pine nuts
  • 4 small tomatoes, chopped
Method
1 Preheat the oven to 200C/Gas 6. Cut and scoop out the aubergines, leaving 1cm around the edge. Roughly chop the flesh and set aside. Brush skins with oil and put on a baking tray. Season, cover with foil and bake for 20 minutes.

2 Put most of the basil, garlic and the rest of the oil in a processor and blend. Stir in 50g Parmesan, the pine nuts, tomatoes and chopped flesh. spoon into the skins and bake for 15 minutes. Serve with the remaining Parmesan and basil.
