Goats' cheese salad
Suitable for vegetarians
Pine nuts add a delicious crunch to this dish.
Serves 4
Preparation time 10 minutes
Ingredients
  • 75g Asda pine nuts
  • 4 slices white baguette, about 3cm thick each
  • 100g pack Asda Welsh goats' cheese, sliced
  • 2 x 150g packs Asda bistro salad
  • 12 cherry tomatoes, halved
  • 6tbsp Asda balsamic vinegar dressing

Method
1 Deep fry the pine nuts over a medium heat for about 2 minutes until golden, making sure they don't burn.

2 Preheat grill. Lightly toast the bread on both sides. Put a slice of cheese on each piece, then grill until the cheese starts to melt.

3 Toss the salad, tomatoes and most of the pine nuts in the dressing. Divide between 4 bowls and top with the cheesy baguette and the remaining pine nuts.
