Bean and rice salad

Ingredients
  • 120g Asda golden savoury rice
  • 400g Asda red kidney beans, drained and rinsed
  • 1 small red onion, chopped
  • 1 green pepper, deseeded and chopped
  • 2 sticks celery, chopped
  • 3tbsp olive oil
  • 1tbsp white wine vinegar
  • 1 garlic clove, crushed
  • 0.5tsp Dijon mustard
  • Chopped, fresh Asda coriander, to serve

Method
1 Cook the rice according to the pack instructions then put to one side to cool.

2 Stir in the beans, onion, pepper and celery. Whisk together the olive oil, white wine vinegar, garlic and mustard, then stir into the rice salad. Sprinkle with fresh coriander and serve.
