Pepperonata
Suitable for vegetarians
Serve these tasty peppers as an antipasto dish

Ingredients
  • 4tbsp sunflower oil
  • 4 red onions, sliced
  • 2 cloves garlic, crushed
  • 2 Asda bay leaves
  • 2 red peppers, halved, deseeded and sliced
  • 2 yellow peppers, halved, deseeded and sliced
  • 2 Asda Extra Special Red Sweet Pointed Peppers, deseeded and sliced
  • 500g tomatoes, skinned and chopped
  • Large pinch of sugar

Method
1 Heat the oil and cook the onions, garlic and bay leaves for 10 minutes until soft.

2 Add the peppers to the pan, then cover and cook gently for another 10 minutes.

3 Stir in the tomatoes and sugar and season. Cook uncovered, stirring frequently, for 30 minutes until sauce thickens. Remove bay leaves and season again to taste. Serve at room temperature.
