Ingredients
- 110ml Asda extra virgin olive oil
- 20g fresh Asda basil, chopped
- 675g strong plain white flour
- 7g sachet fast-action dried yeast
- 12 black olives
Method
1 Gently heat the oil in a small pan until just warm. Add basil, infuse for 20 minutes, then strain oil. Sift flour and pinch of salt into a bowl and stir in yeast. Make a well in centre; add 450ml warm water and 3 tablespoons basil oil. Form into a dough and knead for 10 minutes until smooth, then put in greased bowl. Cover with clingfilm and leave for 2 hours.
2 Preheat oven to 200C/Gas 6. Knead dough for 1 minute, then divide in half. Roll out into two rectangles about 0.5cm thick and put on oiled baking sheets. Cover; leave for 30 minutes.
3 Using your fingertips, make dimples in the dough surface and fill each one with an olive. Drizzle with the remaining oil, then bake for 20 to 25 minutes until the loaves are golden. Transfer to a wire rack to cool.
