Ingredients
- 1 small onion, thinly sliced
- 2tbsp Asda olive oil
- 1 large Asda butternut squash
- 2tbsp Asda clear honey
- 1tsp Asda wholegrain mustard
- 75g Cheshire cheese, grated
- 1tbsp pine nuts, toasted
- 2tbsp fresh Asda rosemary, finely chopped
Method
1 Preheat oven to 190C/Gas 5. Fry the onion in a splash of oil for 10 minutes. Cut the squash lengthways and scoop out the seeds. Put both halves flesh side up on a baking tray, and fill the cavities with the onion. Mix together the honey, mustard and remaining olive oil; drizzle half the dressing over the squash.
2 Cover with foil and bake for 15 minutes, then baste with remaining dressing. Bake for 15 minutes more, then remove foil.
3 Mix together the cheese, nuts and rosemary, then top the squash with the mixture. Bake for 15 minutes until the squash is tender and the cheese golden.
