Ingredients
- 2 medium red peppers
- 2 medium tomatoes, deseeded and diced
- 1tbsp freshly chopped basil
- 1tbsp Asda olive oil
- 1⁄2 small red onion, finely chopped
- Juice of 1⁄2 lemon
Method
1 Preheat oven to 180C/Gas 4. Roast peppers for 30 minutes until they are soft, then place in a plastic food bag. Leave to cool.
2 Cut the peppers in half and remove the seeds, membrane and skin. Slice into strips.
3 Mix with the remaining ingredients, and season to taste. Heat through to serve.
