Ingredients
- 340g Asda frozen shortcrust pastry, thawed
- 6 large eggs
- Grated zest and juice of 3 large, unwaxed lemons
- 175g caster sugar
- 284ml Asda double cream
- Icing sugar, to serve
Method
1 Preheat oven to 200C/Gas 6. Roll out pastry and use to line a 23cm tart tin. Prick base, line with greaseproof paper and fill with baking beans. Bake for 12 minutes, remove beans and paper and return to oven for 5 minutes. Reduce heat to 150C/Gas 2.
2 Beat together the eggs, lemon zest and juice, and sugar, then whisk in the cream.
3 Pour into the pastry case and bake for 25 to 30 minutes until the filling has just set in the middle. Serve warm or cold, dusted with icing sugar.
