Ingredients
- 2 x 250g Asda Jumbo mushrooms
- 50g butter
- Bunch spring onions
- 400g can Asda green lentils, drained
- 2 x 100g packs Asda Welsh goats’ cheese with herbs
- 25g fresh, wholemeal breadcrumbs
- 3tbsp fresh Asda flat-leaf parsley, chopped, plus a few sprigs, to serve
Method
1 Preheat oven to 200C/Gas 6. Grease a large ovenproof dish. Cut off the mushroom stems and chop well, then set aside. Put the mushroom caps in the dish, stem side up, in a single layer.
2 Fry the stems in the butter along with the spring onions until soft. Put in a bowl and add the lentils, cheese, breadcrumbs and parsley; mix well. Divide between the mushroom caps and bake for 20 to 25 minutes.
