Spicy pork and rice one pot supper
An easy all-in-one dish to share with the family for a relaxed Saturday evening
Serves 4
Ready in 1 hour, 15 minutes
Ingredients
  • 2tbsp olive oil
  • 430g pack pork fillet, cut into 2cm pieces
  • 1 bunch spring onions, trimmed and sliced
  • 1 red pepper, deseeded and sliced
  • 1 sachet Asda Mediterranean Reason to Season
  • 150g pack Asda hand-shelled peas
  • 8 Asda sun-dried tomatoes in oil, drained and chopped
  • 250g Asda long grain rice
  • 600ml hot chicken stock, made with a stock cube
  • 12 pitted green olives, halved
  • 100g pack Asda diced chorizo
  • Small handful of fresh Asda parsley, roughly chopped
Method
1 Preheat the oven to 180C/Gas 4. Heat the olive oil in a frying pan and brown the pork pieces all over. Transfer to a casserole dish. Add the spring onions and red pepper to the frying pan and cook for 4 minutes.

2 Transfer the cooked spring onions and pepper to the casserole dish, together with the Asda Mediterranean Reason to Season sachet, peas, sun-dried tomatoes, rice, chicken stock, olives and chorizo. Stir well to combine everything.

3 Cover and cook in the oven for 55 minutes. Check towards the end of the time, adding a little water if the dish looks like it's drying out. It's cooked when the rice and pork are tender, and the stock is absorbed. Serve sprinkled with chopped parsley.
