A colourful, tasty delight

Ingredients
- 1 small aubergine, cubed
- 1 large courgette, cubed
- 1 red pepper, deseeded and cut into large pieces
- 2 cloves garlic, finely chopped
- 400g can Asda chopped tomatoes with herbs
- 350g Asda penne
Method
1 Heat 4 tablespoons of oil in a pan, add the aubergine, courgette and pepper and cook over a medium heat, stirring frequently, for 5 minutes. Add the chopped garlic and continue cooking for another 2 minutes.
2 Stir in the tomatoes and 3 tablespoons of water. Cover and simmer for 5 minutes.
3 Meanwhile, cook the pasta in a large pan of boiling water for 10 to 12 minutes, until just tender. Drain, stir in the sauce, season, then serve immediately.
