Roast chicken and fruit stuffing
Serve with all the trimmings
Serves 6
Ready in 2 hours, 30 minutes
Ingredients
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2tbsp olive oil
  • 140g pack Asda Lemon and Thyme Dried Stuffing
  • 50g Asda raisins
  • 50g Asda dried apricots, chopped
  • 25g butter, melted
  • 2.24kg Asda oven-ready chicken
  • Sprig fresh Asda parsley, to serve
Method
1 Preheat the oven to 190C/Gas 5. Gently fry the onion and garlic in the oil for 5 minutes until soft. In a large bowl, make the stuffing according to packet instructions, then add the onion, garlic, raisins and apricots. Stir well, season and leave to cool.

2 Put two long pieces of foil in a "cross" shape in a roasting tin and brush with most of the butter. Loosen the skin under the chicken's neck and fill with half the stuffing mixture; shape the rest into 8 balls. Put the chicken in the tin; brush with remaining butter. Scrunch the foil up around the chicken and seal to make a loose pouch.

3 Roast for 1 hour 30 minutes, basting twice during cooking. Unwrap the chicken and return to the oven for 30 minutes until golden and cooked through. Cover with foil and stand for 10 minutes before carving.

4 Meanwhile, put the stuffing balls in a roasting tin, drizzle with 2 tablespoons of the chicken juices and cook for 10 minutes. Serve the meat with the stuffing, Asda bacon and sausage rolls and gravy. Garnish with parsley.
