Suitable for vegetarians
A filling version of a traditional Italian soup, with big flavours and a satisfying bite

Ingredients
- 1 medium onion
- 2 x 400g cans Asda chopped tomatoes with chilli and peppers
- 500g carton Asda smooth passata
- 2tsp sugar
- 100g Asda Arborio risotto rice
Method
1 Peel and dice the onion and then heat 1 tablespoon of oil in a large saucepan. Add the onion and cook until soft and slightly translucent.
2 Add the tomatoes, passata, sugar and 500ml water and bring to the boil.
3 Sprinkle in the rice and give it a stir. Season and then simmer, partially covered, for 15 to 20 minutes or until the rice is cooked and tender, stirring occasionally.
