Ingredients
- 1 medium onion, chopped
- 1tsp ground cumin
- 2 carrots, diced
- 1 yellow pepper, deseeded and sliced
- 2 x 400g cans Asda chopped tomatoes with chilli and peppers
- 2 x 290g cans Asda chilli beans
- Asda rice, cooked to serve
Method
1 Fry the onion in a tablespoon of oil until soft and golden. Sprinkle in the cumin and stir over a low heat for about 1 minute, then add the carrots and pepper and continue cooking for another minute, stirring occasionally.
2 Add the chopped tomatoes, cover and simmer for 10 minutes until the carrot is just tender. Add the beans in chilli sauce and simmer for another 5 minutes. Transfer to a bed of rice and serve immediately.
