A succulent combination of aubergine and rich meat sauce

Ingredients
- 1 medium onion, sliced
- 1tbsp olive oil
- 0.25tsp ground cinnamon
- 1 clove garlic, finely chopped
- 500g Asda lean steak mince
- 200ml dry white wine
- 400g can Asda chopped tomatoes with herbs
- 2tbsp fresh Asda parsley, chopped
- 25g butter
- 25g plain flour
- 300ml semi-skimmed milk
- 0.25tsp grated nutmeg
- 2 aubergines, sliced and dry-fried
- 125g Asda Good for you! Mozzarella, sliced
Method
1 Preheat oven to 190C/Gas 5. Fry the onion in the oil until soft, add the cinnamon and garlic and cook for 2 minutes. Add the mince and heat, stirring, until brown, then stir in the wine, tomatoes and parsley. Season and simmer for about 30 minutes, stirring occasionally.
2 Meanwhile, melt the butter, remove from the heat, mix in the flour and stir over a low heat for a minute. Remove from the heat, add the milk and simmer for 2 minutes, whisking all the time. Add the nutmeg and season.
3 Line an ovenproof dish with half the dry-fried aubergine slices, then pour over the meat sauce. Cover with the remaining aubergine, add the white sauce and spread on top. Finish with the mozzarella slices. Bake for 40 minutes.
