Traditional roast turkey
A family tradition

Ingredients
  • 3kg Asda free range whole turkey
  • 150g butter, softened
Method
1 1Preheat oven to 200C/Gas 6. Place the turkey breast-side up on a board and gently work your hand under the breast skin. Spread two thirds of the softened butter over the bird between the skin and breast. Season the cavity. Spoon the stuffing into the neck cavity, if using. Dot the remaining butter over the skin on the thighs and season the outside of the bird.

2 Weigh the turkey and calculate the cooking time. Allow 30 minutes per 500g, plus 20 minutes. Arrange 2 sheets of foil across the length and width of a roasting pan. Place the bird on top and fold over the foil, leaving a gap between the bird and foil to allow air to circulate.

3 Roast for 3 hours, basting regularly. Fold back the foil and return to oven to brown for the last 20 minutes. To test if the turkey is done, pierce the thickest part of a thigh with a skewer - the juices should run clear, not pink or red.

4 Remove the turkey to a warm platter, cover with new foil and stand in a warm place for at least 30 minutes to settle before carving.
