A tasty stateside classic combining sweet and savoury

Ingredients
- 125g plain flour
- 1.5tsp baking powder
- Pinch of salt
- 1tsp caster sugar
- 1 large egg
- 175ml semi-skimmed milk
- 2tsp sunflower oil
- 8 rashers Asda back bacon
- 25g butter
- 8tbsp maple syrup
Method
1 Sift the flour, baking powder and salt into a large bowl. Add the sugar. Make a well, add the egg and milk and whisk just enough to make a thick batter - don’t worry if it’s a little lumpy.
2 Lightly grease the base of a large nonstick frying pan with the oil and wipe away any excess with kitchen towel. Heat the pan until really hot and spoon in 2 tablespoons of batter. Leave until bubbles form on the surface, then flip over with a fish slice and fry until the other side is brown. Cook the pancakes in batches, a few at a time, keeping them warm as you go.
3 Meanwhile, grill the bacon. Serve it with the warm pancakes, topped with a small knob of butter and maple syrup.
