You won’t miss meat with these chunky mushrooms
Serves 4

Cooking time 1 hour
Ingredients
  • 1 medium onion, finely chopped
  • 2 sticks celery, finely chopped
  • 25g butter
  • 250g mushrooms, chopped
  • 250g chestnut mushrooms, chopped
  • 240g can vacuum-packed chestnuts, chopped
  • 2tbsp fresh Asda parsley, chopped
  • Juice of half a lemon
  • 125g dried cranberries
  • 2 large eggs, beaten
  • Pinch of grated nutmeg
Method
1 Preheat oven to 180C/Gas 4. Grease and line a loaf tin, then fry the onion and celery in the butter for 5 minutes. Add the mushrooms and cook for 10 minutes. Tip into a bowl.

2 Add the remaining ingredients, mix well and turn into the tin. Bake for 50 to 60 minutes, until golden brown and firm in the centre.
