Ingredients
- 4tbsp goose fat
- 1.5kg King Edward or Maris Piper potatoes
Method
1 Preheat the oven to 200C/ Gas 6. Put the goose fat into a large roasting tin and place in the oven to heat up.
2 Cut potatoes into even-sized chunks. Put in a large pan of salted cold water, bring to the boil and simmer, covered, for 10 minutes, until just tender but not falling apart. Drain and return to the pan. Put the lid on and shake to roughen the potatoes – this will give them a lovely crisp finish.
3 Making sure the fat is sizzling, add the spuds in a single layer and spoon over the hot fat. Return to the oven for 45 to 50 minutes, basting and turning once or twice, until golden and crispy.
