A Spanish treat for guests

Ingredients
- 1 medium onion, chopped
- 1 tbsp olive oil
- 25g butter
- 1 large red pepper, deseeded and dices
- 1 large courgette diced
- 700g new potatoes, bolied and cut into chunks
- 198g can sweetcorn with peppers drained
- 8 large eggs
- 50ml milk
Method
1 Fry the onion in the oil until soft then add the butter, pepper and courgettes and cook for 4 minutes. Stir in the potatoes and sweetcorn.
2 Lightly beat the eggs milk and season. Pour over veg and cook on a low heat for 5 minutes, then put the frying pan under the grill to set top. Cool, transfer to a board and cut into 5cm squares.
