Suitable for vegetarians
A light marinade from the south of France. Perfect for chicken, pork, or seafood – try with squid or scallops.

Ingredients
- 6tbsp olive oil
- 2tbsp lemon juice
- 1tsp chopped fresh thyme
- 15g chopped fresh flat-leaf parsley
- 1 clove garlic, crushed
Method
1 Put ingredients in a screw-topjar, season to taste and shake well to mix.
2 Put the meat or fish in a dish, pour over the marinade and turn the pieces to coat them on all sides. Cover, refrigerate and marinate for up to 4 hours, turning occasionally.
