Great for meats such as beef, lamb or chicken, or sprinkled over salmon, sardines or mackerel.

Ingredients
- 2 tbsp cumin seeds
- 3 tbsp coriander seeds
- 2 tbsp black peppercorns
- 2 tbsp salt
- 1 tbsp soft brown sugar
Method
1 Mix the spices together and crush in a pestle and mortar or food processor.
2 Rub it on to chicken pieces, pork, or lamb chops up to 4 hours before you start cooking. If you use it on whole sardines or mackerel, make slits in the fish and rub into the slits, as well as sprinkling over the skins just before cooking.
