Ingredients
- 450g pack Asda turkey mince
- 1tbsp nam pla (Thai fish sauce)
- 1tbsp Asda light soy sauce
- Grated zest and juice of 1 lime
- 2tbsp chopped Asda fresh coriander, plus sprigs to garnish
- 1 fresh chilli, deseeded and finely chopped
- 50g fresh white breadcrumbs
- 6 spring onions, trimmed and finely chopped
- 1 ripe mango, peeled, stoned and diced
- 8cm piece cucumber, diced
- 2tbsp Asda mango chutney
- 1tbsp Asda sunflower oil
- Lime wedges, to serve
Method
1 Put the turkey mince in a bowl with the nam pla, soy sauce, lime zest, chopped coriander, chilli, breadcrumbs and half the spring onions and leave to marinate.
2 Meanwhile, to make the mango salsa, mix together the remaining spring onions, mango, cucumber, mango chutney and lime juice. Set aside.
3 Shape the mince mixture into 16 thin patties, each about 5cm across. Wet your hands to do this as it helps prevent the mixture sticking to them.
4 Heat half the oil in a nonstick frying pan. Cook the turkey patties in batches over a medium heat for 3 to 4 minutes on each side, until cooked through (adding more oil as necessary).
5 Serve 4 patties per person, garnished with fresh coriander and accompanied by the mango salsa and lime wedges.
