Suitable for vegetarians
This colourful and refreshing salad is a traditional dish in Lebanon – fattoush means moistened bread

Ingredients
- 1 Asda wholemeal pitta bread
- 1 cucumber, deseeded and cut into chunks
- 3 tomatoes, cut into chunks
- 125g British radishes, trimmed and halved
- Bunch spring onions, sliced
- 20g fresh Asda parsley, chopped
- 20g fresh Asda mint, chopped
- 80g bag watercress
- 1 little gem lettuce, torn into large pieces
- Juice of 2 large lemons
- 6tbsp Asda extra virgin olive oil
Method
1 Split open the pitta and toast for a few minutes. Allow to cool slightly, then break into bite-sized chunks and set aside.
2 Put the vegetables and herbs into a large bowl. Whisk together the lemon juice and oil, then season to taste. Pour over the salad and toss well. Transfer to a serving bowl, scatter over the pitta bread and serve immediately.
