Fattoush
Suitable for vegetarians
This colourful and refreshing salad is a traditional dish in Lebanon – fattoush means moistened bread
Serves 6
Preparation time 15 minutes
Ingredients
  • 1 Asda wholemeal pitta bread
  • 1 cucumber, deseeded and cut into chunks
  • 3 tomatoes, cut into chunks
  • 125g British radishes, trimmed and halved
  • Bunch spring onions, sliced
  • 20g fresh Asda parsley, chopped
  • 20g fresh Asda mint, chopped
  • 80g bag watercress
  • 1 little gem lettuce, torn into large pieces
  • Juice of 2 large lemons
  • 6tbsp Asda extra virgin olive oil

Method
1 Split open the pitta and toast for a few minutes. Allow to cool slightly, then break into bite-sized chunks and set aside.

2 Put the vegetables and herbs into a large bowl. Whisk together the lemon juice and oil, then season to taste. Pour over the salad and toss well. Transfer to a serving bowl, scatter over the pitta bread and serve immediately.
