Ingredients
- 150g Asda Brown Basmati Rice
- ΒΌ cucumber, halved and sliced
- 1 pepper, deseeded and diced
- 1 small red onion, finely chopped
- 75g raisins
- 50g cashew nuts, toasted
- 4tbsp Asda Italian salad dressing
Method
1 Cook the rice according to packet instructions. Drain in a sieve and rinse under cold running water.
2 Add all the remaining ingredients to the cold rice, including the dressing, and chill.
