Ingredients
- 2tbsp Asda olive oil
- 1 red onion, finely chopped
- 500g Asda passata
- 1tsp sugar
- 2tsp Asda dried oregano
- Salt and freshly ground black pepper
- 50g Asda diced chorizo, chopped
- 454g Asda steak mince
- 1tbsp chopped Asda fresh thyme, plus sprigs to garnish
- 25g fresh white breadcrumbs
- 225g Asda linguine or spaghetti
- 1tbsp cornflour
Method
1 Heat 1 tablespoon of the oil in a pan, add the onion and cook until soft. Add the passata, sugar, 1 teaspoon of the oregano, 200ml water and seasoning. Bring to the boil, cover and simmer for 5 minutes.
2 Meanwhile, mix the chorizo in a bowl with the mince, chopped thyme, breadcrumbs, remaining oregano and seasoning. Using wet hands, shape into 28 meatballs.
3 Heat the remaining oil in a nonstick pan and fry the meatballs until browned, turning frequently (you may need to do this in two batches). Add the meatballs to the sauce and simmer gently for 15 minutes.
4 Meanwhile, add the pasta to a pan of boiling water and cook for 10 to 12 minutes or until al dente (just tender to the bite).
5 Mix the cornflour to a smooth paste with a little cold water, then stir into the sauce to thicken. Drain the pasta and mix with the meatballs. Serve garnished with fresh thyme.
