Ingredients
- 3 Asda Extra Special sweet pointed red peppers
- 1tbsp olive oil
- 2 x 170g packs mangetout
- 4tbsp Asda balsamic dressing
- 50g pine nuts, toasted
Method
1 Preheat the oven to 200C/ Gas 6. Lay the peppers on a baking tray and brush with the oil. Roast in the oven for 10 to 15 minutes, until lightly charred.
2 Place the peppers in a plastic bag and leave them to cool completely. When cool, peel off the skins and chop the flesh into bite-sized pieces.
3 Briefly blanch the mangetout in boiling water, then drain. Rinse under cold running water to keep the bright green colour.
4 Toss the peppers and mangetout in the dressing, scatter with toasted pine nuts and serve at once.
