Nest cake
A scrummy nest cake that’s so easy, even adults can make it!
Serves 12
Preparation time 1 hour
Ingredients
  • 125g butter
  • 125g caster sugar
  • 4tbsp golden syrup
  • 4 level tbsp cocoa
  • 125g cornflakes
  • 500g pack golden marzipan
  • 1 strawberry candy cable
  • Silver balls
  • 2 chocolate flakes
  • Chocolate mini eggs
Method
1 Find a plate about 26cm wide. Put it on a sheet of nonstick baking paper, draw round it with a pencil and cut out the circle. Put the butter, sugar, syrup and cocoa in a pan over a low heat and stir with a wooden spoon until simmering. Simmer for 1 minute, then remove from heat and leave to cool slightly – don’t touch the syrup, it will be very hot.

2 When the cocoa mixture has cooled a bit, tip the cornflakes into the pan. Gently stir in the cornflakes with a large metal spoon until they are all coated in the gooey mixture. Take care not to crush them as you stir.

3 Lay the circle of baking paper over an 18cm sandwich tin. Tip the cornflake mixture onto the paper and press lightly into the tin. Using the back of a large metal spoon, shape into a nest by making a large well in the middle – keep pressing until the mixture comes about 2cm above the edge of the tin. Leave to cool for 30 minutes while you make the chicks.

4 To make the chicks, cut off a third of the marzipan and slice into 12 even pieces. Roll each piece into a ball to make heads. Cut the rest of the marzipan into 12 even portions and roll into egg-shaped pieces to make bodies. Pinch one end of each egg-shaped piece with your fingers to make a tail.

5 Put the heads on the bodies and press them together so that they stick and don’t fall off! Cut 12 little triangles from the candy cable to make beaks, and put one on each head with the point sticking out. Put 2 silver balls onto each chick head for the eyes and press in well.

6 Lift the nest out of the tin and peel off the baking paper. Put the nest on a cake board or large plate. Cut the chocolate flakes into twigs using a round-bladed knife. Fill the nest with chocolate twigs and mini chocolate eggs and put 2 chicks in the nest. You can cut the nest into 12 slices to serve, and include some eggs and a chick with each portion.
