Leek and goats' cheese flan
Suitable for vegetarians

Ingredients
  • 340g block Asda frozen shortcrust pastry, thawed
  • plain flour, for rolling out
  • 250g (trimmed weight) Asda leeks, rinsed, dried and cut into 1cm slices
  • 25g butter
  • 100g Asda Welsh goats’ cheese with herbs, cut into small pieces
  • 3 large eggs, lightly beaten
  • 142ml carton Asda single cream
  • salt and freshly ground black pepper

Method
1 Preheat the oven to 200C/Gas 6. Roll the pastry out on a lightly floured surface to a 28cm round. Use to line a 22cm flan tin, taking care to ease the pastry right into the corners of the tin without stretching it.

2 Bake the pasty case blind (without filling). Prick the base with a fork and line with baking paper or foil. Add ceramic baking beans or dried rice or pasta to weigh the paper down. Bake in the oven for 10 minutes, remove paper and beans, then bake for another 5 minutes. Remove from the oven and reduce the temperature to 180C/Gas 4.

3 Meanwhile, put the leeks and butter in a pan. Cover and cook over a low heat for 15 minutes until tender, stirring occasionally. Drain and reserve the liquid.

4 Put the goats’ cheese in a bowl. Add the eggs, cream and liquid from the leeks. Beat lightly with a fork and season to taste.

5 Put the leeks in the cooked flan case, pour over the cream mixture and bake for 25 minutes until set and golden.
