A dreamy and light summer fruit dessert

Ingredients
- 2 x 125g punnets Asda blackberries
- 1tbsp caster sugar
- 150g Asda fresh custard
- 1 vanilla pod
- 142ml carton double cream
Method
1 Reserve a few of the smaller blackberries for garnish and set aside. Put the remaining blackberries into a food processor with the caster sugar and whizz into a purée. Pass the mixture through a sieve to remove the seeds.
2 Spoon the custard into a bowl and stir in the blackberry purée. Using a small, sharp knife, split the vanilla pod in half lengthways and scrape out the seeds. Stir the seeds into the custard and blackberry mixture.
3 Whip the cream in a clean bowl until it makes soft peaks, then gently fold it into the custard mixture. Spoon the fool into serving glasses and decorate with the reserved berries. Chill until ready to serve.
