Ingredients
- 25g fresh breadcrumbs
- 1tbsp pine nuts, roughly chopped
- 1tbsp finely chopped fresh parsley
- 1tbsp finely chopped fresh mint
- Asda Extra Special rack of lamb with rosemary
Method
1 Preheat oven to 190C/Gas 5. Finely chop the rosemary that comes with the lamb; mix with crumbs, nuts and herbs. Season.
2 Put the lamb, ribs down, in a roasting tin. Press the crumb over the fat. Roast for about 30 minutes, depending on how pink you like your lamb. Rest for 10 minutes. Slice into cutlets. Cool. Store in layers between sheets of grease proof paper in fridge.
