Creamy leek and haddock soup
Packed with fish and vegetables, this makes a comforting main meal
Serves 4
Ready in 30 minutes
Ingredients
  • 2tbsp vegetable oil
  • 500g potatoes, peeled and cut into chunks
  • 500g leeks, trimmed and chopped
  • 600ml hot vegetable (or fish stock)
  • 300ml milk
  • 500g smoked haddock fillet, skinned and cut into chunks
  • A small handful of fresh parsley, chopped, and crusty bread, to serve

Method
1 Heat the oil in a large pan. Add the potatoes and cook over a gentle heat, stirring occasionally, for 5 minutes, until they just begin to soften on the outside.

2 Stir in the leeks and cook, stirring occasionally, for 2 to 3 minutes. Stir in the stock and milk and bring to the boil. Reduce the heat slightly and simmer for 10 minutes, until the leeks and potatoes are soft. Season and add the smoked haddock. Cook gently for 5 minutes until the fi sh is just cooked and fl akes easily. Scatter with fresh parsley and serve with crusty bread.
