Turkey Provençale-style
Olives and tomatoes add an exotic twist to turkey
Serves 4

Ingredients
  • 2tbsp olive oil
  • 4 large turkey steaks, cut into strips
  • 1 onion, peeled, halved and sliced
  • 2-3 garlic cloves, crushed
  • 1 x 400g can Asda chopped tomatoes with herbs
  • 200ml Asda passata
  • 50g pitted black olives
  • Fresh basil, to garnish
  • Cooked rice, to serve

Method
1 Heat the oil and fry the turkey until just cooked, about 6 minutes. Remove and set aside.

2 Add the onion and cook until soft. Add the garlic and cook for 1 minute. Stir in the tomatoes and passata, and season. Simmer for 5 minutes.

3 Stir in the olives and any turkey juices. Simmer for a further 5 minutes, then add the turkey. Stir and simmer for 5 minutes. Garnish with the basil and serve with rice.
