Seared salmon with vegetables
A nutritious family meal
Serves 4
Ready in 30 minutes
Ingredients
  • 500g Asda new (or baby) potatoes, halved lengthways
  • 200g green beans, halved
  • 4tbsp light soy sauce
  • 2tbsp soft brown sugar
  • Juice of 1⁄2 lemon
  • 4 pieces salmon fillet
  • 2tbsp olive oil
  • 1 x 200ml pot crème fraîche
  • 2tbsp smooth French mustard

Method
1 Simmer potatoes in a pan of water for 10 to 12 minutes; add the beans for the final 3 minutes.

2 Meanwhile, mix the soy sauce with the sugar and lemon juice. Use to coat the salmon, then brush it with oil on both sides. Heat a griddle or frying pan until very hot and cook the salmon for 1 minute on each side. Reduce heat and cook for 4 minutes on each side.

3 Mix the crème fraîche and mustard. Season and put in a bowl. Drain the vegetables and add to the bowl, coating in the sauce. Serve with the salmon.
