Very berry Christmas cake

Thrill the family at Christmas with this delicious home-made festive treat

Ingredients
  • 225g plain flour
  • 1.5tsp Asda ground mixed spice
  • 175g butter
  • 175g light soft brown sugar
  • 4 large eggs
  • Grated zest of 1 orange
  • 150g bag Asda ground almonds
  • 4 x 250g bags Asda Berry Dried Fruit Mix
  • 3tbsp rum, brandy, sherry or orange juice
  • Caster sugar, for rolling out
  • 500g pack Asda marzipan
  • 75g apricot glaze
  • 500g Asda ready-to-roll icing
  • Cake decorations

Method
1 Preheat the oven to 150C/Gas 2, and line a 20cm-deep square cake tin with three layers of baking paper. Sift the flour and spice together. In a separate bowl, cream the butter and sugar, then beat in the eggs, one by one, adding a tablespoon of the flour mixture with the last two. Stir in the remaining flour with the orange zest, almonds, fruit and the alcohol or orange juice.

2 Put in the tin and make a shallow depression in the centre. Bake for 1 hour, then reduce to 140C/Gas 1 and continue for another 2 to 3 hours, covering with foil 2 hours into baking. The cake's cooked when a skewer inserted into the centre comes out clean. Remove from the tin and cool on a rack - don't peel off the baking paper. When cold, store in an airtight container for up to one month.

3 When ready to ice, remove the baking paper and, on a surface sprinkled with caster sugar, roll out the marzipan. Put the cake on top and cut round it. Set the marzipan aside, then gently heat the apricot glaze and brush it over the cake top.

4 Top with the marzipan, then roll out the icing to fit and put on top. Decorate as desired.
