Banana and date pudding with white chocolate sauce

Ingredients
  • 150g self-raising flour
  • 1tsp baking powder
  • 125g butter, softened
  • 125g caster sugar
  • 2 large eggs
  • 1 ripe banana, mashed
  • 150g Asda pitted dates, chopped
  • 50g Asda pecan nuts, chopped
  • 284ml pot Asda single cream
  • 200g Asda white chocolate

Method
1 Preheat the oven to 180C/160C Fan/Gas 4. Grease 8 individual pudding basins or ramekins and line the bases with baking paper. Put them on a baking tray. Sift the flour and baking powder into a large mixing bowl.

2 Add the butter, sugar, eggs and mashed banana to the bowl and beat together well. Stir in the dates and nuts. Divide the mixture between the pudding basins and bake for 20-25 minutes or until the tops spring back when lightly pressed.

3 Meanwhile, break the chocolate into squares and put in a small pan with the cream. Stir over a very low heat until the chocolate melts and the sauce has a smooth consistency – take care not to let it boil.

4 Gently turn out each of the puddings and serve with the chocolate sauce.
