Ingredients
- 1 onion, chopped
- 3tbsp olive oil
- 1 large carrot, peeled and diced
- 1 stick celery, diced
- 1 large potato, peeled and diced
- 400g can Asda chopped tomatoes
- 700ml chicken stock
- 400g can Asda chickpeas, drained and rinsed
- 1 thick slice white bread, cubed
- 100g pack Asda diced chorizo, fried
- 2tbsp fresh Asda flat-leaf parsley, chopped
Method
1 Cook the onion in half the oil until soft. Add carrot, celery, potato, tomatoes, stock and chickpeas, cover and simmer for 25 minutes. Fry bread in leftover oil until golden. Stir croutons, chorizo and parsley into soup.
