This is a tasty winter alternative to the classic asparagus dish

Ingredients
- 400g Asda tenderstem broccoli
- 3 large egg yolks
- 2tbsp white wine vinegar
- 250g butter, cut into small pieces
- 1⁄2-1tsp lemon juice
Method
1 Bring a large pan of water to the boil. Trim the ends of the broccoli if necessary. Add the spears to the pan.
2 Cook for 2 to 3 minutes, depending on the thickness, until tender. Drain and keep warm. Or you can steam the broccoli for 5 to 6 minutes.
3 Meanwhile, put the egg yolks and white wine vinegar, with a little salt and white pepper, in a blender or food processor and pulse to mix. Melt the butter in a pan and, with the blender or food processor running, carefully pour the butter in a slow, steady stream until the sauce becomes thick and glossy. Add the lemon juice and seasoning to taste. Serve the broccoli drizzled with the tangy sauce as a delicious, light starter.
