Ham and cheese soufflé omelette
Light and fluffy, this is a notch above your standard omelette
Serves 1
Preparation time 20 minutes
Ingredients
  • 2 medium eggs
  • 2 slices thin sliced ham, cut into strips
  • Knob of butter
  • 50g mature white Cheddar, grated, plus a little extra to garnish
Method
1 Crack the eggs and carefully separate them, putting the yolks in one bowl and the whites in another one.

2 Beat the yolks with some salt and pepper and stir in the ham. Whisk the whites until stiff, then fold into the yolk mixture.

3 Heat the butter in a frying pan and pour in the omelette mixture. Cook over a medium heat for 2 to 3 minutes.

4 Sprinkle over the cheese, then put the omelette under a preheated grill and cook for 3 to 4 minutes, until the cheese is golden and bubbling. Fold over the omelette and slide onto a plate. Sprinkle with the remaining cheese and serve with salad leaves.
