Chunky French onion soup
Suitable for vegetarians
Gooey, cheesy croutons make this extra tasty
Serves 1

Ingredients
  • Knob of butter
  • 1 large onion, thinly sliced
  • 1 garlic clove, crushed
  • 1tsp plain flour
  • Splash white wine (optional)
  • 300ml vegetable stock
  • Pinch Asda dried thyme
  • 2-3 slices French stick
  • 25g mature Cheddar

Method
1 Heat the butter in a medium pan and add the onion and garlic. Cook over a very gentle heat for about 15 minutes, stirring occasionally, until soft and golden brown. Stir in the flour and cook for 1 minute.

2 Stir in the wine (if using), then gradually add the stock and dried thyme. Season with salt and pepper and simmer gently for 15 to 20 minutes.

3 Meanwhile, toast the bread on one side, then top the untoasted side with the cheese. Grill until the cheese is bubbling. Pour the soup into a bowl and top with the cheesy toasts.
