Mushrooms and egg on toast
Suitable for vegetarians
A New York deli-style supper!
Serves 4
Ready in 20 minutes
Ingredients
  • 2 New York Deli Ciabatta Rolls
  • 1tbsp olive oil
  • 2 x 250g packs jumbo mushrooms
  • 1 garlic clove, crushed
  • 2tbsp fresh flat leaf parsley, plus little extra for serving
  • 2 x 100g Asda French RoulĂ©
  • 4tbsp Asda Cranberry Sauce
  • 4 medium eggs

Method
1 Preheat a grill. Cut the ciabatta rolls in half and toast them on both sides. Then wrap them to keep warm.

2 Thickly slice the mushrooms and chop the parsley, and fry with the olive oil and garlic in a hot frying pan for 2-3 minutes.

3 Mix together the cheese and cranberry sauce. Bring a large shallow pan of water to the boil, break the eggs into the pan and poach for 1-2 minutes. Drain well.

4 Spread the cranberry and cheese over the toasts. Then pile the mushrooms on top and arrange a poached egg over each before serving immediately, with a sprinkle of fresh parsley.
