A quick and easy rice dish

Ingredients
- 2 medium eggs
- 3tbsp sunflower oil
- 1 small onion, chopped
- 2 x 175g packs Asda Pilau Rice
- 275g Asda Frozen Petit Pois
- 2 x 100g packs Asda Smoked Salmon
- 2tbsp fresh coriander, chopped
Method
1 Add the eggs to a pan of boiling water and simmer for 8 minutes. Drain and put in a bowl of cold water.
2 Put the oil in a saucepan and cook the onion until soft. Add the sachets of rice with seasoning, and 800ml boiling water. Simmer for 8 minutes. Add the peas and cook for about 4 minutes until all the water is absorbed.
3 Shred the salmon and add to the rice. Stir and heat for 2 minutes. Stir in the coriander.
4 Shell the eggs and quarter. Serve on the kedgeree.
