A tempting way to turn leftover turkey into a treat

Ingredients
- 3tbsp lemon juice
- 3tbsp Asda Walnut Oil
- ½ cucumber, halved lengthways and thickly sliced
- 275g leftover cooked turkey, cut into bite-sized pieces
- 3 sticks celery, thickly sliced
- 200g green seedless grapes, halved
- 2 ripe avocados, peeled, stoned and cubed
Method
1 Put 2 tablespoons lemon juice in a bowl with the walnut oil. Season and whisk together.
2 Add the cucumber, turkey, celery and grapes. Toss to mix.
3 Just before serving, toss the avocado in the rest of the lemon juice, drain off any excess and add to the salad.
