Asparagus and bean salad
Suitable for vegetarians
Use frozen veg if you’re running out of fridge space
Serves 4
Ready in 15 minutes
Ingredients
  • 225g fine green beans
  • 225g frozen broad beans
  • 2 x 100g packs Asda Asparagus Tips or 250g pack Asda Frozen Asparagus
  • 3tbsp Asda Olive Oil
  • 1tbsp Asda Balsamic Vinegar
  • ½tsp Asda Dijon Mustard
  • 3 spring onions, trimmed and thinly sliced
  • 6 pitted black olives, chopped

Method
1 Boil the green beans and broad beans for 5 minutes, and the asparagus for 3 minutes. Drain, rinse under the cold tap to refresh, then drain again.

2 Whisk together the oil, vinegar and mustard, and season. Toss the vegetables in the dressing with the spring onions and olives.
