Warm bacon and mushroom salad
A mouthwatering mix of fresh flavours and textures
Serves 6
Ready in 20 minutes
Ingredients
  • 2 pitta breads
  • 1tbsp light soy sauce
  • 2tbsp balsamic vinegar
  • 2tbsp walnut oil
  • 1⁄2tsp Asda mild French mustard
  • 6 rashers smoked streaky bacon, cut into 1cm pieces
  • 2tbsp sunflower oil
  • 250g chestnut mushrooms, halved
  • 125g oyster mushrooms, halved
  • Asda mixed salad leaves
Method
1 Toast the pitta, then cut into 1cm pieces. Set aside. Put the soy sauce, vinegar, walnut oil and mustard in a small bowl. Season, then whisk to make a dressing.

2 Dry fry bacon until crisp. Set aside. Add oil to the pan. Fry mushrooms for 3 to 4 minutes, then add dressing and heat. To serve, combine all the ingredients and divide between 6 bowls.
