A tasty combination of vegetables and succulent salmon

Ingredients
- 4 Asda Smart Price Salmon Fillets
- 1tbsp olive oil
- 50g Asda Smart Price Butter
- 1 Asda Smart Price Onion, finely sliced
- 150g Asda Smart Price Frozen Peas
- ½ cucumber, cut into batons
- 2tbsp fresh parsley, roughly chopped
- 1 Smart Price Lemon
Method
1 Remove the skin from the salmon with a sharp knife, then cut in half lengthways.
2 Heat the oil in a large frying pan and sear the salmon fillets in the hot oil for 3 minutes on each side. Remove from pan and set aside.
3 Melt 25g butter in the same pan and gently sweat the onions. Meanwhile, cook the peas in a pan of boiling water for 2 to 3 minutes. Drain. Add the cucumber and peas to the onions and fry for 3-4 minutes. Add the parsley and remaining butter and toss gently.
4 Lay the salmon back in the pan and cook for a further 2-3 minutes. Squeeze the juice of the lemon over the fish. Serve.
