Thai-style beef skewers
Try this instead of a takeaway

Ingredients
  • 450g rump steak
  • 3tbsp Asda Thai Red Curry Paste
  • ½ 400g can light coconut milk
  • juice of ½ lime
  • 3tbsp soy sauce
  • Rice and vegetables, to serve

Method
1 Cut the steak into long, thin strips. Mix the curry paste with the coconut milk, lime juice and soy sauce. Add the beef and toss well. Thread the meat onto four soaked bamboo or metal skewers in an ‘s’ shape. Brush liberally with the coconut mixture.

2 Cook under a preheated medium-hot foil-lined grill for 15 minutes, turning over once or twice and brushing with marinade. Five minutes before the end of the cooking time, place the remaining marinade in a small saucepan and simmer until piping hot and slightly reduced and thickened.

3 Serve the beef skewers straight away with the hot marinade, rice and vegetables.
