Ingredients
- 275g brown rice
- 450g lean pork fillet
- 200g pack Asda Mange Tout and Baby Corn
- 4tsp sunflower oil
- 2 carrots, cut into batons
- 1 red and one yellow pepper, deseeded and cut into short strips or squares
- 4 bunches spring onions, trimmed and sliced diagonally
- 2 x 125ml sachets Asda Good for you Sweet & Sour Sauce
Method
1 Cook the brown rice for 30 minutes, until cooked through. Meanwhile, cut the pork into bite-sized pieces and halve the baby corn.
2 After 10 minutes of the rice cooking, heat half the oil in a non-stick wok or large frying pan, add the pork and stir fry for about 4 minutes or until just cooked. Drain off any juices and add the rest of the oil to the pan.
3 Add the carrots and peppers and stir fry for 2 minutes. Then add the mange tout, baby corn and spring onions and stir fry for another 2 minutes.
4 Add the sauce and stir to coat everything. Simmer for a minute and serve with brown rice.
