Lamb korma and tomato relish
You’d never know this rich curry is actually low in fat
Serves 4
Ready in 2 hours, 20 minutes
Ingredients
  • 300ml Asda Good For You Greek-style Yogurt
  • 3tbsp Asda Mild Curry Powder
  • 400g lamb leg steaks, cut into bite-sized pieces
  • 2 red onions
  • 1tbsp sunflower oil
  • 2 cloves garlic, finely chopped
  • 2tbsp ground almonds
  • 2 sweet potatoes, peeled and cubed
  • 2 beef tomatoes, roughly chopped
  • 2tbsp chopped fresh mint
  • Juice of ½ lime
  • Brown rice, boiled, to serve

Method
1 Mix half the yogurt with the curry powder and then stir in the lamb so all the pieces are coated. Cover with cling film and refrigerate for at least an hour.

2 Preheat the oven to 190C/170C Fan/Gas 5. Chop one of the onions. Heat the oil in a pan and cook the chopped onion over a low heat until soft. Add the garlic and cook for a minute. Add the lamb and marinade, stir well and then transfer to a casserole dish. Cover and cook in the oven for 30 minutes.

3 Reduce the oven temperature to 160C/140C Fan/Gas 3. Mix the rest of the yogurt with the almonds and 100ml water. Season and then stir into the lamb with the sweet potato. Cover and cook for 1½ hours.

4 Halve and finely slice the other onion. Add tomato to the sliced onion, mint and lime. Serve the curry with the tomato relish and rice.
